Food-safe gloves and migration testing – what the logo actually certifies

The glass-and-fork symbol certifies chemical migration under the conditions tested – not cleanliness, and not unconditionally. The correct legal basis for rubber gloves, the six simulants, and the gap to check.

The glass-and-fork symbol on a glove box means one specific thing: the glove was tested against food simulants and did not release substances above the permitted limits. It says nothing about how clean the glove is, and nothing about whether it is suitable for the food you actually handle. Both of those are separate questions, and both get missed.

This article covers what the symbol rests on legally, which simulants are used, why some gloves are tested for ten minutes and others for thirty, and what to require in a specification.

This is where most guidance on food-safe gloves – including our own earlier version of this article – goes wrong.

Commission Regulation (EU) No 10/2011 applies to plastic food contact materials. Nitrile and latex gloves are not plastics; they are elastomers. There is no EU-specific measure for rubber food contact materials, which means gloves are governed by:

Regulation (EC) No 1935/2004, the framework regulation. It sets the general obligation: materials must not transfer constituents to food in quantities that endanger health, change the composition of the food, or deteriorate its taste, odour or appearance. It applies to all food contact materials, gloves included.
National measures, because the framework regulation leaves the detail to Member States where no EU-specific measure exists. In practice the reference is the German position: the LFGB (Food and Feed Code) and BfR Recommendation XXI on commodities based on natural and synthetic rubber, which sets category-specific requirements. Category 3 covers short contact with foodstuffs, and is what most examination gloves are assessed against.
Regulation (EU) No 10/2011 by analogy, for its simulants and its overall migration limit, because it provides the recognised methodology even though it does not directly bind rubber.

The practical consequence for a buyer: a declaration that cites only "EU 10/2011" for a glove is citing the wrong instrument. A properly documented food-safe glove references 1935/2004 and BfR XXI with its category, as our own examination gloves do.

What the symbol does not cover

Two common misreadings, both worth writing into a specification:

It is not a cleanliness claim. Migration testing measures chemical transfer. It says nothing about microbial contamination on the glove surface. That is bioburden, tested separately, and a glove can be perfectly food-safe by migration and still arrive with an unacceptable bacterial or fungal count.

It is not unconditional. Approval is granted for the contact conditions tested. A glove assessed for short contact with aqueous foods at ambient temperature has not been shown safe for prolonged contact with fatty food, or for handling hot food. The declaration should state the conditions; if it does not, it has not answered the question.

The simulants

Simulants stand in for real food so that results are comparable between laboratories. The set used comes from Annex III of Regulation (EU) No 10/2011:

Alcoholic foods above 20 %, and oil-in-water emulsions
D2 – vegetable oil
Lipophilic foods, fats and oils
E – Tenax (modified polyphenylene oxide)
Dry foods, for testing specific migration

Which simulants are used depends on the intended contact. A glove for general kitchen use is typically assessed against the aqueous and acidic simulants; one intended for handling fats and oils needs D2, which is the most aggressive for elastomers and the one most likely to fail. This is the specific gap to check. A glove certified with A and B only is not certified for butchery, dairy or fried food, even though it carries the same symbol on the box.

The overall migration limit applied by analogy from 10/2011 is 10 mg of total constituents per dm² of food contact surface.

Ten minutes or thirty

Contact time and temperature must together represent the worst foreseeable use of the product – that is the governing principle, not a fixed number. Higher temperature and longer contact both increase migration, so a test that understates either understates the result.

For gloves this generally resolves to short-contact conditions, and the two durations you see on datasheets correspond to different assumptions about the task:

Ten minutes suits genuinely brief handling: portioning, plating, packing, checkout.
Thirty minutes covers sustained handling where the glove stays in contact with the same food – prep work, kneading, boning, filleting.

Neither covers wearing one pair through a whole shift with continuous food contact, and neither covers hot food unless the test temperature says so. If your process involves either, ask for testing that reflects it rather than assuming the margin is there.

What to require in a tender

The legal basis, stated correctly: Regulation (EC) No 1935/2004, plus LFGB and BfR XXI with the category identified.
A declaration of compliance naming the tested simulants, the temperature and the contact time.
Confirmation that the simulants match your food types – specifically D2 (vegetable oil) if fats, oils or dairy are handled.
The overall migration result, not just a pass statement.
Bioburden data separately, if the gloves are used in food production rather than service.
Where the same glove is also a medical device or PPE, the corresponding MDR and PPE declarations, since food approval covers none of that.

Frequently asked questions

Does a food-safe glove need to be a medical device too? No, they are independent approvals. Many of our examination gloves hold all three – medical device under MDR 2017/745, PPE under Regulation (EU) 2016/425, and food contact under 1935/2004 – which lets one item code serve clinical, laboratory and catering use across an institution. But a glove can be food-safe and nothing else.

Are black nitrile gloves food-safe? Colour is a pigment question, and pigments are part of what migration testing assesses. Black gloves can be fully food-safe; what matters is whether that specific formulation was tested and declared, not the colour.

Can I use the same glove for raw meat and for ready-to-eat food? Migration testing does not address cross-contamination. Changing gloves between raw and ready-to-eat handling is a hygiene control, governed by your HACCP plan rather than by the glove's food approval.
